Ingredients (for about 8 scones):
• 250 g (2 cups) all-purpose flour
• 50 g (1/4 cup) sugar
• 1 packet of baking powder (about 2 tsp)
• A pinch of salt
• 60 g (1/4 cup) cold butter, diced
• 100 g (3.5 oz) assorted candied fruits (cherries, orange peels, pineapple, etc.) from Passion du Fruit
• 150 ml (2/3 cup) milk
• 1 egg (for brushing)
Instructions:
1. Prepare the candied fruits:
• Dice the candied fruits if necessary for even distribution.
2. Make the dough:
• Preheat your oven to 200°C (400°F).
• In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
• Add the cold butter and rub it into the dry ingredients with your fingertips until it resembles coarse crumbs.
• Stir in the candied fruits.
• Gradually pour in the milk, mixing gently with a spatula until the dough just comes together. Do not overmix.
3. Shape the scones:
• On a lightly floured surface, roll out the dough to about 2–3 cm (1 inch) thick.
• Use a round cookie cutter (or a glass) to cut out scones.
• Place them on a baking tray lined with parchment paper.
4. Brush and bake:
• Beat the egg and lightly brush the tops of the scones for a golden finish.
• Bake for 12–15 minutes until the scones are golden brown.
5. Serve:
• Allow the scones to cool slightly on a wire rack.
• Serve warm, with butter, clotted cream, or jam.
